In 2000, Stephane Glacier was running for the prestigious title of Meilleur Ouvrier de France (MOF) in Pastry category. This competition rewards best talents in 162 disciplines from luxury high quality artisan and industrial to modern high-tech professions, based on a range of qualities: dexterity, knowledge of modern techniques and traditional expertise, creativity and aesthetic sense. The Meilleurs Ouvriers de France are recognizable by their famous red, white and blue-collar they can wear for life. It is a true distinction of excellence.

Since then, Stephane Glacier has achieved many thing. Owning a bakery and cooking school both for professionals and amateur sin Colombes (92), he also launched his own publishing house with Gaëtan Paris (Meilleur Ouvrier de France Bakery 1997). Some of his books are available in English and luckily for us so is the ‘I melt for chocolate’.

He answered some of our questions for a sweet portrait of the Chef.

Favorite desert(s): Apple tart, flan, eclair au chocolat

Tip to successfully make an apple tart: Cook the apples first so they reduce to guarantee fully cooked tart and crust. Heat gently in a hoven or saucepan with butter, sugar, soft brown sugar and cinnamon.

Best culinary experience when traveling: Japanese sushi, a New York Cheescake at Almondine Bakery, some baklavas in Beirut…

Biggest culinary challenge: Without a doubt the Meilleur Ouvrier de France (MOF) competition. What engagement, tenacity and work needed to get ready for this! It’s eighteen hours of work a day to get ready. I personally lost 20 lbs in only three-month between time topic was confirmed and the competition. My challenge today? Run new businesses: the school, the bakery, the books… And what’s next? Maybe a school in NY!
